The “Orto” is the realm of “Babbo” Mauro, my dad whose garden fresh produce is used exclusively in certain of our restaurant dishes. “Zero centimeter” cooking for guests of Canto del maggio, who can also help themselves to things directly in the garden.
The scent of bruschetta
There’s a big table in the middle of the garden, which, when the season of the new olive oil and ripe tomatoes arrives, abounds with platters of richly scented bruschetta.
Here each season has its own magic: in spring the artichokes blossom and in summer you eat the flowers. Roses are transformed into marmalade, violets land in salads and in flowerbeds around tables in the gardens sprout little red fruits that guests can nibble on straight from the plant.
